Recipe: Vegetarian Neapolitan Pasta

I thought I'd share one of my favourite pasta recipes with you guys. It's so simple and easy - as well as being super fresh. 

Fresh Basil Leaves
1 Fresh Mozzarella Ball (remove from its liquid, squeeze out any further liquid with kitchen paper. Place it in a bowl lined with kitchen paper and covered with cling film. Do this at least 30 mins before preparing your meal and keep in the fridge)
Fresh Vine Tomatoes (halved)
Olive Oil

1. Cook your pasta as per the packet instructions. Ensure that your mozzarella is prepared before this.
2. Meanwhile, half your tomatoes and fry them in a frying pan with a little olive oil.
3. Once they are softened, tear up some basil leaves and stir them into your tomatoes.
4. When the pasta is cooked, drain it and transfer it to your frying pan.
5. Turn off the heat on your pan, tear up the mozzarella and combine.
6. Serve!
